Tipperary Brie is a farmhouse cheese handcrafted by the Maher family on Cooleeney Farm in County Tipperary, Ireland.
This soft, bloomy-rind cheese is made from pasteurised cow’s milk sourced from the farm’s own pedigree Friesian herd. It features a classic white mould rind and a soft yellow paste that evolves from a slightly chalky core when young to a fully smooth, buttery texture as it matures over 8–10 weeks. Its flavour profile is mild and creamy, characterized by delicate notes of butter, sweet grass, and undergrowth.
The sister cheese to Cooleeney; and while the two cheese’s share a lot of the same characteristics, Cooleeney is the more complex camembert-style cheese with its stronger notes of mushroom and farmyard flavours. Tipperary Brie is a classic Brie-style cheese, crafted to be consistently milder, sweeter, and more buttery. Tipperary Brie remains a “crowd-pleaser” with a cleaner, more delicate grassy finish.
To complement the delicate and buttery nature of Tipperary Brie, choose pairings that offer high acidity or subtle sweetness without masking its mild, grassy notes. For drinks, a crisp Sauvignon Blanc or a Chardonnay, a light Pilsner or wheat beer offers a refreshing, bubbly contrast.
