Cais na Tire Sheep Cheese is produced in the lush landscapes of County Tipperary. Crafted with dedication and passion by the Maher family.

The process behind Cais na Tire Sheep Cheese begins with high-quality milk from the family’s flock of Friesian ewes. These sheep graze freely on the rich pastures of the Golden Vale, an area renowned for its fertile soil and ideal farming conditions. The fresh, creamy milk is collected and brought to the farmhouse creamery, where it undergoes a meticulous cheesemaking process. Using traditional methods, the milk is carefully pasteurized, and cultures and rennet are added to initiate the curdling process. The curds are then cut, drained, and pressed into molds before being aged to perfection.

The aging process is where Cais na Tire truly develops its unique character. The wheels of cheese are carefully tended for 6-12 months months, allowing them to mature and develop a complex flavour profile. The result is a hard cheese with a crunch texture and a rich, nutty taste. Subtle hints of sweetness and a slight tang from the sheep’s milk make this cheese a delightful addition to any cheese board. We often describe it as having notes of pear drops! Which can never be a bad thing.

Cais na Tire Sheep Cheese is incredibly versatile. It can be enjoyed on its own – paired with fruits and nuts for a sophisticated snack or as an interesting point of difference on a cheeseboard. Our Laura also loves to keep a wedge in her fridge as a local alternative to parmesan.
