Kilmóra is an award-winning, Swiss-style farmhouse cheese produced by Marion Roeleveld at Killeen Farmhouse Cheese in Portumna, County Galway. Inspired by Alpine traditions, it is often described as an Emmental or Maasdam-style cow’s milk cheese.
Made using pasteurised cow’s milk and traditional animal rennet. Inspired by Alpine traditions, this semi-hard cheese is celebrated for its sweet and nutty flavour profile, which is balanced by a gentle savoury tang and a smooth, elastic texture. Its distinctive pale yellow paste features the large eyes typically found in Emmental or Maasdam varieties, making it as visually striking on a cheeseboard as it is versatile in the kitchen. Due to its excellent melting qualities, it is frequently used in gourmet toasties and fondues, though it shines equally well when paired simply with a crisp Chardonnay to highlight its delicate, toasted notes.
