Irish raw milk cheese – we truly adore them. Raw milk cheese is simply cheese made with unpasteurised or non-thermised milk. And before the invention of pasteurisation in 1822, all cheese was made with raw milk. Call us traditionalists but we believe raw milk allows the cheesemaker to craft something with a true sense of place – as raw milk carries the microbial communities of each location. It also allows for a greater differentiation between the cheese from each season. And seasonality in cheese is something truly special!
